Do you have the right stuff?
When it comes to cleaning
having the right things to clean
with will make the world of difference. Trying to clean a kitchen floor with a small cloth is going to
take a huge amount of time and energy. I’m all for cleaning as fast as possible and using the least amount of energy
possible. This is not because I’m lazy, it’s because, like most people, I have
a gazillion other things to do and cleaning
is not something I particularly love doing. Though, I do love having a clean environment to live and work in.
It’s a good idea to have several different cleaning cloths. Microfibre cloths are
really nice to clean with because
they don’t leave any little fluffy bits of cloth behind when you wipe a surface
like most other cloths. I like to have different coloured cloths for different
areas. The cloth that cleans your kitchen countertop should never clean
the toilet or the floor. When you buy cleaning cloths for your home or
office, buy an assortment of colours and if lots of different people are likely
to use these cleaning cloths, then
it might be a good idea to make a chart so that everyone is aware of which
colour cloths are for which cleaning
job. This way your cleaning cloths
will not cross-contaminate with germs or bacteria found in other spaces.

How to keep clean when handling food
The 10
commandments of handling food
When
handling food it is important for all individual who are in the food factory to follow the 10
commandments of personal hygiene.
Firstly,
hair must be covered with a mop cap that does not allow any hair to be exposed
to minimise risk of loose hairs falling into the food that is being prepared in
the food factory. Staff must not
touch their face or ears when working with food. Individuals must also keep
their noses out of the food.
All staff
should ensure that they have a fresh mouth and that they do not handle any food
when sick.
Proper
protective clothing must be worn. This clothing must always be worn and should
be well-maintained and cleaned
thoroughly. It should be regularly inspected.
Staff
working in a food factory must
always work with care. There should be no jewellery worn in the kitchen as
germs and bacteria can hide in all jewellery. Nobody should be allowed to eat
or smoke in food preparation areas. There should be designated areas for these
activities.
Finally
staff should be trained to clean
hands on a very regular basis and should be properly trained in hand cleaning procedures.

What are control measures?
Kitchens and food
factories need to have control measures to ensure that hazards are not able
to become a problem in these environments.
Controlling and limiting contaminations is vital. There are several things that
can be done as control measures.
To only use
approved suppliers will ensure that there is a good quality of ingredients
coming into the factory. These ingredients should only come from a HACCP compliant factory.
The staff
should be effectively instructed, trained and supervised. All staff should be

clear on the necessity of carry out duties in a way that cannot compromise HACCP objectives. All staff should also
be trained in ensuring that their own levels of personal hygiene are also very
high.
It is vital
that pest infestations are prevented and there is great care taken to ensure
that waste is disposed of effectively and can cause no future problems.
To keep
everything clean it helps if the
premises is well-designed and that all equipment is properly planned and well
maintained. All points of contact for food must be properly cleaned and disinfected. In a premises with a good layout, raw food and
ready-to-eat foods will never come into contact with one another.

Cleaning with HACCP
When
adopting the HACCP method of cleaning your kitchen or food factory
there are very specific ways to clean.
There are different types of cleaning
involved. Maintenance cleaning will
be vastly different from deep cleaning.
The frequency of cleaning here is
the absolute minimum cleaning that
should occur.
Contact
surfaces must be cleaned continuously
. Floors in kitchens and food factories
should be cleaned after each shift. Daily
cleaning is required for ovens,
stove tops, grills, bain-maries and plate warmers. Waste bins will also need thorough
daily cleaning. Walls and ceilings
in kitchens should be cleaned once a
week. Cleaning out grease traps and
floor drains should also be done once a week.
Wherever
possible it is best to have liquid cleaning

using colour-coded cloths or brushes.

How to clean with HACCP
The HACCP cleaning system is typically instituted in food factories and kitchens.
In order
for the HACCP system to be effective
