HACCP Compliant Cleaning Chemicals

What is HACCP?

HACCP is an acronym for hazard analyisis and critical control points. It is a preventative approach to food safety that addresses all aspects of handling rather than only finished product inspection. HACCP is used in the food industry to seek out unsafe processes and has been found to be much more effective in keeping food safe.
There are seven principles which HACCP follows. These are:
1. 1. Conduct a hazard analysis
2. 2. Identify critical control points
3. 3. Establish critical limits for each critical control point
4. 4. Establish critical control point monitoring requirements
5. 5. Establish corrective actions
6. 6. Establish procedures for ensuring that the HACCP system is working as intended
7. 7. Establish record keeping procedures
HACCP is instituted in dairies, food processing plants, hospitality industry, fish, poultry and meat industries and fruit, wine and vegetable farms. How utensils, tables, equipment and containers are cleaned is an integral part of working with HACCP principles. The cleaning products that are used in the food industry need to be specialized to ensure that they do not contaminate any food. Colour-coding of utensils and equipment for different areas is an important part of HACCP.

What does a Cleaning Schedule for HACCP look like?

Cleaning schedules are a necessary part of the HACCP environment. Staff should be properly informed of what to clean, how to clean, what to use to clean and how often to clean. All of this information should be displayed on the cleaning schedule. Inspections of cleaning are vital for the system to work properly and re-cleaning must take place if necessary.
