How to clean with HACCP


The HACCP cleaning system is typically instituted in food factories and kitchens.

In order for the HACCP system to be effective the correct cleaning equipment should be used. This cleaning equipment should be colour coded so that a particular item is used in a particular area. This helps to prevent cross-contamination of bacteria. Therefore each particular area will have it’s own set of cleaning equipment.

This will also apply to the cleaning chemicals used. The cleaning chemicals used to clean a food factory or kitchen need to be effective in killing bacteria to ensure food safety.  Only approved cleaning chemicals may be used! Using approved cleaning chemicals can minimise the risk of contamination of food on contact surfaces.

There will also need to be a master cleaning schedule in place which will involve deep, maintenence and daily cleaning procedures. Cleaning records will need to be kept.

It is also necessary to test for any residues after the food factory has been cleaned to ensure that cleaning was effective.
